Marinated Garden Tomatoes
Summery Tomato Delight
6 large ripe tomatoes
1/4 cup extra-virgin olive oil
2 cloves garlic, minced
2 tablespoons fresh basil, chopped
1 tablespoon fresh parsley, chopped
1 tablespoon balsamic vinegar
Salt and pepper to taste
Wash and slice the tomatoes into 1/4-inch thick rounds.
Arrange the tomato slices on a serving platter, slightly overlapping.
In a small bowl, whisk together the olive oil, minced garlic, fresh basil, fresh parsley, and balsamic vinegar.
Drizzle the olive oil mixture over the tomato slices.
Season with salt and pepper to taste.
Let the tomatoes marinate for at least 30 minutes before serving.
